Elderberry Syrup

Ingredients:

2/3 cup black elderberries (preferably dried, fresh increase water by 1/2 cup)

3 1/2 cups filtered water

1 cup raw honey

2T fresh or dried ginger root

1 tsp cinnamon powder

1/2 tsp cloves or clove powder

Step 1: Pour water into medium pot and add elderberries, ginger, cinnamon and cloves ( not the honey yet!)

Step 2: Bring to a boil and cover. Reduce heat to simmer for about 45 minutes to an hour until liquid has reduced by almost half. Remove from heat to cool enough to be handled. Pour through a strainer into glass mason jar or bowl.

Step 3: Discard the elderberries or compost. Let cool to lukewarm, when no longer hot, add 1 cup of raw honey. Stir well. When well mixed store in refrigerator up to 5 weeks.

Dose

Daily preventive dose is 1/2 tsp to 1 tsp for kids and 1/2 Tbsp to 1 Tbsp for adults. If cold or flu symptoms strike, take normal dose every 2-3 hours a day.

***** Please do not give raw honey to children younger than 12 months. Use pasteurized honey, raw sugar or glycerin instead.
